Whether it’s a taco truck, donuts-on-the-go or a mobile version of your favorite brick-and-mortar restaurant, Edwardsville wants to ensure the vehicles meet the city’s fire safety standards. During its Public Safety Committee meeting Monday, Fire Chief Rick Welle asked the committee to approve an ordinance amending Chapter 46, Article IV of the city’s ordinances to establish fire safety guidelines for food trucks operating in Edwardsville. Welle said that while Madison County Health Department approved food trucks for general use in the county, Edwardsville had no ordinance language to provide basic fire safety regulations for food trucks operating within the city or within the fire department’s jurisdiction.
